This is very simple to put together and makes an excellent or option. I prefer to buy (or make) plain yogurt myself, rather than buying pre-sweetened options. Silk Unsweetened Cultured Coconut is my favourite in-store option, although I love how easy it is to make your own coconut & probiotic version. Flavour wise the jury was out, one of my daughters loved the taste of the homemade version, my other daughter preferred store bought. I would like to play around with the coconut and probiotics I am using, to see if that makes a difference as I would love to create something that works for everyone. Store bought options are fine, but it doesn’t get any better than a recipe that contains all of two ingredients.

Fermented foods are excellent for digestive health, and peaches contain a host of different benefits, including Vitamin C and Vitamin A. They belong to the stone fruit family, and are also related to almonds. When I split open a pit I found an almond like seed in the middle, so this did not come as a huge surprise. Chia and hemp seeds contain omega 3 fatty acids and protein, which makes this a very well rounded treat. I purposely kept the sugar level in the fairly low, feel free to experiment to see what works best for you.

Peach Parfait

Chia Layer

Ingredients

1 ½ cup water
1 pitted and diced peach
1 Tbsp grated ginger (or to taste)
1 Tbsp hemp seeds
1 Tbsp maple syrup
1 tsp vanilla extract
½ cup chia seeds

Directions

Blend water, peach, ginger, vanilla extract, and maple syrup together until smooth. Add to a large bowl and whisk in chia until no clumps remain. Let seeds plump up for 20 minutes.

Ingredients

3 peaches, pitted, peeled and diced

Coconut Yogurt

Ingredients

1 batch homemade coconut yogurt (I like this recipe by Minimalist Baker) or 1 ½ cup store-bought
1 Tbsp maple syrup (or to taste)
1 tsp vanilla extract

Directions

Whisk together coconut yogurt, maple syrup, and vanilla extract.

Assembly Instructions

Add approximately ½ cup of the chia mixture to the bottom of a glass. Top with a layer of diced peaches, followed by coconut yogurt. Top with a sprinkle of cinnamon and serve.
