Strawberry Shortcake Quick Oats

I love oatmeal in the morning, whether it is warm in the winter or prepared as an overnight oat or quick oat variation in warmer weather. I love to mix up the ingredients I use, whether it’s chocolate and chaga, blueberry and , or in this case, Strawberry Shortcake! This flavour profile is very reminiscent of one of my favourite desserts as a kid. You could top it with a dollop of coconut whipped cream for a bit of a deluxe take on the base recipe, or play around with the milk you use for some flavour variation. Coconut would be wonderful!

I’ve included some hemp seeds and chia seeds for a healthy dose of omega 3 fatty acids and protein, this will ensure that your breakfast sticks with you all morning. I’ve also added some goji berries for the high amounts of antioxidants and vitamin c they contain, in addition to their anti-inflammatory and immune boosting properties. Unlike a lot of pre-packaged oatmeal, this recipe doesn’t have a whole lot of sugar, with most of the sweetness coming from the berries. We recently found some delicious from bees pollinating strawberry and blueberry plants at a local farmer’s market, and I found this variety added a lovely flavour to the oats. Making use of locally available is pretty awesome, feel free to try different varieties and be sure to let me know which one is your favourite! If you don’t eat , maple syrup is a great alternative.

Strawberry Shortcake

Strawberry Milk Ingredients

4 cups (I used homemade)
1 pint , stems removed
2 Tbsp
Zest of 1 lemon
¼ tsp
1½ tsp honey (or maple syrup)

Quick Oats Ingredients

2 cups (or whole oats, if you want to do this as an overnight recipe)
2 Tbsp
2 Tbsp

For Topping

1 pint organic strawberries, diced
Sprinkle of hemp seeds
Drizzle of honey (optional) or maple syrup

Directions

Combine strawberry milk ingredients in a blender and process until smooth.
Combine quick oat ingredients in a large mixing bowl, and stir to combine.
Pour strawberry milk over dry ingredients and stir or whisk to combine, making sure you have no lumps.
Set a timer for 20 minutes, and let the mixture rest, this will allow the chia seeds to absorb liquid and plump up.
Serve topped with additional hemp seeds, diced strawberries and a drizzle of honey.

Variation

If you’d like to do this recipe as an overnight oat variation, you can switch up the quick oats for whole rolled oats and combine dry ingredients in a half gallon mason jar. Pour the strawberry milk on top, and shake to combine. Place the mason jar in the fridge over night and serve topped with hemp seeds, diced strawberries and honey or maple syrup (if desired) in the morning.
